Veggie ‘nuggets and chips’

Nuggets don’t have to always be filled with chicken (yes I do love 20 nugs) these vegetarian alternatives are perfect for those who don’t eat meat but also those who do!

£0.56     20 mins (plus 2 hours in the fridge)     Serves 2

All you need is

For the nuggets

  • 1 tin haricot beans
  • 50g spinach
  • 10g cheese
  • 1 onion
  • 1 carrot
  • 1 tbsp. olive oil
  • Pinch salt and pepper

For the chips

  • 2 tbsp. self raising flour
  • 1 tbsp. natural yogurt
  • 1 tbsp. paprika
  • 1 tbsp. olive oil
  • Pinch salt and pepper

To make it just

  1. Peel and roughly chop the carrot and onion then place in a food processor with all other ingredients for the nuggets.
  2. Blitz until then form a rough paste then grab a small handful (roughly size of a tbsp.) and mould into a round flat shape.
  3. Place on a chopping board or plate and leave in the fridge to harden for approximately 2 hours.
  4. While the nuggets are hardening you can prep your chips.
  5. In a bowl combine all the ingredients and using your hands mould and form a dough ball.
  6. Chop the ball into 4, take one section and using a rolling pin (or just your hands) roll roughly 1cm thick and then chop into triangles or another shape if you prefer. Repeat process with other 3 balls of dough.
  7. When you’re ready, place the nuggets into a frying pan with a small amount of oil and fry until brown on both sides. They can take 5 minutes per side.
  8. When you’ve browned half the nuggets place the chips in the same pan and cook until brown and crisp.
  9. Remove from the pan and tuck in.
