Spinach and Goats Cheese Omlette

In an attempt to be healthy I’ve tried to change up my diet and that involved eating a lot of salads which are great, but after a while I just get so bored of them. So I went for a traditional omelette which I wasn’t going to upload but with the help of my proper camera and some natural daylight the meal just looked too good not to share!

All you need is

  • 15g goats cheese
  • 1/2 red pepper
  • 2 Eggs
  • 6 turkey breast strips
  • 1 tin sweetcorn
  • Handful spinach
  • 30ml milk
  • 4 sun-dried tomatoes

To make is just

  1. Mix in a bowl the eggs, shredded spinach, chopped up goats cheese, chopped up pepper, sliced turkey breast strips, handful of sweetcorn, chopped sun-dried tomatoes and top with milk.
  2. In a frying pan pour in the mixture then cook on the bottom before placing under the grill to brown off on the top.
