Spanish Omelette

So with the first year of uni coming to an end, my food cupboards are starting to look bare, with the few ingredients I have left, I knocked together this omelette. This is a very quick snack perfect for a small lunch as it only takes 10 minutes to create.

£0.90    10 mins    Serves 1

All you need is
  • 2 eggs
  • 20ml of milk
  • Pinch salt and pepper
  • 25g cheese
  • 1/4 red onion
  • 1/4 red pepper
  • 60g potatoes
To make it just
  1. Chop the salami, cheese, red pepper, potatoes and red onion into cubes.
  2. Put the potatoes into a large mixing bowl and top with water before putting in the microwave for 5 minutes.
  3. Drain the potatoes then add the onion, pepper, cheese and salami before cracking the eggs in and using a fork mixing it together then add the milk
  4. Put into a small saucepan before cooking on the hob then place under the grill to finish.
