#LunchBoxInspo: Sesame Potato Salad

Who says lunches have to be big and stodgy? This is light and tasty. I packed mine in my Dotty About Paper personalised lunchbox.

£0.75     20 minutes     Serves 1

All you need is 

  • 100g sweet potato
  • 1 spring onion
  • 1/2 large carrot
  • 1 tbsp. sweetcorn
  • 1 tbsp. sesame oil
  • 1 tbsp. sesame seeds

To make it just

  1. Cut the sweet potato into cubes and place in boiling water until soft (approximately 5 minutes) and drain.
  2. Using a peeler, peel carrot until you reach the core and slice the spring onion into chunks then fry in the pan you used to cook the potato in.
  3. Add the potato to the pan again and add the sweetcorn, sesame seeds and sesame oil and mix well.
  4. Leave to cool then pop in a box and enjoy for lunch.
