#LunchBoxInspo: Mediterranean Lunch Box

And the back to school regime commences. But what to have in your lunch? Well, why not pop this all together Sunday evening and have a Mediterranean lunch on Monday? My box is from Find Me A Gift.

All you need is

Tip: chop up the whole sweet potato and leave in the fridge covered with water to stay fresh and cook up another batch

  • 1 small sweet potato
  • 1 tbsp. olive oil
  • 1 tsp paprika
  • Pinch salt and pepper

For the avocado humous

Tip: ensure you store in an airtight container and if you use small spoons this can serve up to 4

  • 1/2 tin chickpeas
  • 1/2 an avocado
  • 1 tbsp. olive oil
  • 1 tbsp. lemon juice
  • 1/4 tsp chilli flakes
  • Pinch salt and pepper

For the falafel 

Tip: freeze any leftovers for up to 3 weeks then defrost overnight before work/school

  • 1/2 tin chickpeas
  • 1/2 small white onion
  • 2 tsp olive oil
  • 2 tsp flour
  • 1 tsp: garlic/cumin/coriander
  • 1/4 tsp chilli flakes
  • Handful spinach

To make it just

  1. Finely slice the sweet potato and place in a bowl, cover with the oil, paprika, salt and pepper and organise on a tray ensuring none are overlapping. Pop in the oven on 200C for 30 minutes, flipping halfway through.
  2. Once cooked leave to cool then store in an airtight container before popping in your lunchbox, store in a cool dry place for up to 3 days.
  3. In either a pestle and morter or a blitzer place the onion (finely sliced or use blitzer to slice) and chickpeas and combine until a paste starts to form. Add in all other ingredients and combine well until you have a smooth consistency.
  4. Store in an airtight container in the fridge before spooning out to have with your lunch, will keep for up to 2 days.
  5. Combine all the ingredients for the falafel and mould into balls before frying until browned on all sides.
  6. Leave to cool then store in a cool dry place in an airtight container for up to 2 days, alternatively place in the freezer for up to 1 month and defrost overnight.
