Egg fried rice

The other day I couldn’t decide what I wanted for dinner, and the longer I sat thinking about it the hungrier I got. So I decided to try and throw together a meal using as few ingredients as possible. The end result? This 5 ingredients egg fried rice, super easy, quick and tasty.

£0.47     Ready in 30 minutes     Serves 1

All you need is

  • 80g rice
  • 1 egg
  • 80g frozen vegetables
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil

To make it just

  1. Bring a pan of water to the boil and add the vegetables and rice, allow to reboil then reduce the heat and cover until the water has been absorbed. This should take approximately 20 minutes.
  2. Once the water has been absorbed, crack the egg into a bowl and whisk well, then either microwave until egg is scrambled and fluffy, or add to the rice and scramble in the pan.
  3. Once the egg and rice are all mixed in together cover with the sauce and oil, again mixing well.
  4. Then serve and enjoy!
