As you can tell couscous is a big favourite food of mine. It’s so convenient to make as it only takes a few minutes to put together. This dish uses my favourite ingredients to mix with couscous which is chorizo as it gives a stunning flavour to the dish and helps add to it. The raisins help make it slightly sweeter and even if you aren’t a fan of raisins like myself they still work well with this dish.

All you need is
- 50g plain cous cous
- 1/2 vegetable stock cube
- 30g feta cheese
- 25g raisins
- 25g cucumber
- 25g red pepper
- 20g chorizo
- 25g sunflower seeds
- 2 small mushrooms
- 1 tomato
To make it just
- Fill a cup with plain cous cous and place into a bowl and then crumble over the top half a vegetable stock cube before topping with hot water.
- Slice up into small cubes the cucumber, red pepper, chorizo and mushrooms and put into a small pot and add a handful of sunflower seeds and raisins before cooking down.
- Cut a slice of feta cheese and put into the cous cous once the water has been absorbed and slice the feta into the cous cous.
- Once the vegetable mix in the pot has warmed through add to the cous cous.
- If you find it to be a bit dry you can add some oil or salad dressing.
