Avocado Egg Muffin

I have recently been introduced to the avocado. I honestly wonder how I managed this far without it. It is great for adding to any meal and are increasingly popular in breakfast dishes, mixed with eggs this is full of protein and is sure to fill you up till lunch.

All you need is

  • 1 wholemeal muffin
  • 1 poached egg
  • ½ avocado
  • 1 tbsp plain yogurt
  • ¼ tsp garlic powder
  • ¼ tsp lemon juice
  • Salt and pepper

To make it just

  1. Cut the muffin half and toast.  Boil the water to poach the egg.  
  2. Cut the avocado in half and peel, place it in a bowl and mash down to a smooth consistency.
  3. Mix in the yoghurt, lemon juice, garlic powder salt and pepper to the avocado.
  4. When the muffin is toasted spread with the avocado mix and top with the cooked poached egg.
