Apple granola muffins

One of my favourite things to create is healthy snacks. I always find myself snacking on-the-go so by making something healthy at home, I can save money and I know exactly what’s gone into it!

£0.90 a batch     Makes 10     Ready in 30 minutes

All you need is

  • 1 apple
  • 1 tsp cinnamon
  • 90g of oats
  • 20g cup of cacao nibs
  • 30g cup of walnuts
  • 1 tbsp pumpkin seeds
  • 1 tbsp honey or agave

To make it just

  1. Pre-heat your oven to
  2. Chop the apple into small chunks then cover with cinnamon and water then leave to cook for around 10 minutes
  3. In a bowl combine the oats, cocoa nibs and pumpkin seeds
  4. Crush the walnuts then add to the bowl
  5. Once the apples are soft place them into a blitzer with half of the leftover water and the honey, then add to the bowl
  6. Place on a lined baking tray or into a muffin tray, shape and combine well so they hold their shape once cooked
  7. Leave to cook for 15 minutes
  8. Cool completely then store in the fridge for up to 2 weeks
